Monday Mornflake Meals

400g Mornflake Jumbo Oats (gluten free) – Roughly blitzed
½ Clove of garlic – Finely grated
40g Finely grated Parmesan
40g Manchego/Mature cheddar – Finely grated
Several generous glugs of rapeseed oil
30g Butter – Melted
Generous sprinkle of sea salt flakes
Several turns of black pepper
1 Ball of buffalo mozzarella
2 Courgettes – Peeled into strips
Small bunch of wild garlic – Both the leaves and flowers
Purple basil leaves
5 Sprigs of thyme – Fried until crisp
Squeeze of lemon juice
Drizzle of rapeseed oil
Sprinkle of sea salt flakes and black pepper
HOW TO MAKE

Preheat your oven to 180 degrees Celsius then begin by thoroughly combining the ‘pizza’ style base ingredients so all flavours are evenly distributed.
Take a sheet of parchment paper and make a circular shape with the oats, patting them down so they bind together to form the base. Bake for 10-12 minutes or until the edges start to darken and turn golden.
Prepare all topping ingredients then simply scatter on top of your base. Next drizzle with lemon and oil followed by seasoning. Serve immediately.
